reason for this is store bought tomatoes are picked green and artificially ripened; they do not convert their starches to sugar the way vine ripened tomatoes do. Scientist altered the gene that causes ripe tomatoes to soften. As a result the tomatoes resist bruising when transported and have a longer shelf life after they ripen. Because of these new characteristics they can stay on the vine longer before picking, which gives them a better taste.
