example I could use the enzyme amylase instead of protease. I could also change the substrate molecule from protein to for example starch. I could also use an enzyme from mammals instead of bacteria. For example I could use the enzyme mammal pepsin or mammal trypsin. By changing the enzyme to a mammal enzyme I would be able to see if the optimum temperature was the same when the enzyme changed from bacteria to mammal.
